Ingredients:

2 pounds Yukon gold potatoes
1 teaspoon salt (or to taste)
1/4 cup butter or margarine
1 large egg
1/2 cup all-purpose white flour
1/4 teaspoon ground black
pepper


Filling:
1 pound ground beef
1 medium onion
1 teaspoon salt (or to taste)

all-purpose flour for dusting
(about 1/4 cup)
oil for frying (about 6
tablespoons)

Make potato puree.

Pour oil into large skillet.
Add chopped onions. Saute
onions over medium-low heat,
stirring occasionally, until light
golden.
Add ground beef. Break beef
apart into small pieces.
Mix meat with onions.
Add salt.
Cook meat over medium heat for
10 minutes or until meat turns
an even brown and is no longer
pink in color. Take meat out,
place it into a bowl and cool
slightly.
Place mashed potatoes into
large bowl. Add egg.
Add flour.
Add pepper.
Mix well with spoon to blend all
ingredients.
Sprinkle cutting board with
flour generously.
Place heaped tablespoon of
potato mixture onto cutting
board.
With your hand, form smooth
patty and flatten it slightly.
Place heaped teaspoon of beef
filling onto one half of potato
patty.
Fold another part of patty over
filling so that both edges meet.
With your hands well-floured,
press patty gently to seal edges
and form a smooth and neat
patty, slightly long. Flatten it a
little but be careful not to break
it. Make remaining patties and
keep them on generously
floured cutting board to prevent
patties from sticking to it.
Heat large skillet over medium
heat. Add oil.
Place several patties into skillet
so that they barely touch each
other.
Cook over medium heat for
about 5 minutes or until bottoms
of patties are deep
golden-brown. Flip carefully with
spatula. Cook for another 3 to 4
minutes or until the other side is
deep golden-brown.
Arrange patties on serving
platter and serve immediately.
